Me and tomato. We had a love and hate relationship. When I was little, eating tomatoes felt so right with certain foods and at certain times of day. But things got shifted as I grew up and my tastes changed over time, and tomatoes taste so weird.

I’m glad that ‘hate’ period has gone over and to date, I’m in love with tomatoes. So much in love that I would crave for tomato salad almost every week. The weather has been getting colder these days and with a little rain here and there, I  constantly need something warm in our hands.

Hot chocolate is one of my friends lately, but my favorite of something warm is this creamy tomato soup. Soup is a favorite in our home and I love how it comforts you on a cold dry night or after a long hard day. There’s nothing more exciting than tuning on a jazzy music in the background while enjoying a big bowl of homemade soup. Yes, it’s gotta be homemade.

Luckily, this tomato soup from scratch is not a rocket science and it doesn’t take too much of your time. So today, I’m partnering up with my friends at Hamilton Beach and used their Hamilton Beach Sound Shield 950 to puree this tomato soup. I have to admit…I love this blender. It’s so quiet, so smooth, and I feel like blending everything, from smoothies to salsa, and not to forget margaritas. The blender comes in 5 speeds and 3 programmed settings, and is designed to reduce noise from the four different areas of a traditional blender so you don’t need to worry about waking up your whole house while busy in the kitchen. And this is where you can get it. Who knows you can get a good deal this Thanksgiving.

Description

Full of roasted garlic and tomatoes, this soup needs to be on your weekly rotation, no matter the season.

Ingredients

  • 2 pounds fresh tomatoes (or 6–8 medium tomatoes)
  • ¼ cup (½ stick) unsalted butter
  • 10 sprigs thyme, tied together
  • 1 medium onion, thinly sliced
  • 10 garlic cloves
  • 1–2 tsp sugar
  • 1/2 cup extra-virgin olive oil
  • 4 cups chicken stock
  • 3 cups water
  • 1 cup heavy cream, 1/4 cup for garnish
  • Salt and freshly ground black pepper

Instructions

Preheat oven to 450 degrees F.

Wash, core and cut the tomatoes into halves. Arrange the tomatoes, garlic cloves and onions onto a baking tray. Drizzle with olive oil and season with salt and pepper, and roast for 20 to 30 mins.

Place the tomatoes, garlic, and onion in a large pot. Add the chicken stock, water, and thyme. Bring to a boil and simmer for 15 mins. Remove from the heat and let it cool slightly; then discard thyme sprigs.

Puree soup in a blender until smooth. Return soup to low heat, add cream and adjust consistency, if necessary. Season with salt and pepper. Garnish in bowl with a splash of heavy cream.

    Doesn’t roasting a vegetable make it taste so much better! This would be a good soup to make with all of the end of the season ripe tomatoes and then freeze it for later.

    I have never made tomato soup from scratch and I am a little intimidated. I love tomato soup and this looks vegan so I will keep it in mind when I cook. We have a rotation too, so maybe this will hit it.

    This recipe sounds really good and seems easy to make. I have only attempted to make potato soup and french onion soup, so this one should definitely make my list. The banana bourbon milkshake sounds really good as well.
