Quick & easy corn fritters than are perfect for an appetizer, snack, or part of your main meal.
- 2 1/2 cups whole kernel corn
- ⅓ cup of rice flour
- ⅓ cup all-purpose flour
- ½ teaspoon cumin
- 1 large egg
- Salt, to taste
- 1 green onion, thinly sliced
- Oil, for frying
- Heat oil in a heavy pot or deep fryer.
- Mix ingredients in a bowl. Add 1-2 tablespoons of water if the batter is too thick.
- Drop fritter batter by spoonfuls into the hot oil and fry until golden. Drain on paper towels.
