This easy and healthy breakfast casserole is loaded with vegetables to start your day off with a nutritious meal! And a delicious meatless dinner!
There’s something you should know about me. I don’t like routine but I’m stuck with having oatmeal and smoothies for breakfast. Not a bad idea but I wish I have a proper breakfast like fried egg salad or french toast. I probably hungry as I type this, but really…I miss savory breakfast.
Coincidentally, I bumped into this one when I was in Indonesia.
Oatmeal with chicken soto flavor. Soto is a yellow chicken soup, a famous traditional dish of Indonesia. I didn’t get a chance to try this and I wish I could bring some home; however the TSA is very strict about getting meat into the U.S. so I could just taste this in mind. One day, maybe.
Long story short, I always have my savory brunch on weekends because that’s the only time I could take my time and do nothing but enjoying a big plate of “cold” savory brunch, after taking pictures for Instagram. But next week will be different. Between Valentine’s Day and Lunar New Year, there’s not much time to prep. In fact, you’ll probably find me snooze on Sunday morning due to food coma. And this is where this casserole comes in handy.
I love a hearty easy breakfast like this and I’m sure you do too! So here you go. Loaded Mushroom Breakfast Casserole, a perfect dish for Lent, Meatless Monday and my vegetarian friends. I might skip fried egg salad for breakfast for this.
They’re so, so good and they probably took me fifteen minutes to make from start to finish.

- 12 ounce bag fresh baby spinach
- 1 lb fresh mushrooms, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 eggs, lightly beaten
- 2 1/2 cups monterey jack cheese (or a combination with cheddar cheese)
- 1/4 tsp minced fresh thyme leaves
- 1 cup half-n-half
- 6 russet potatoes , peeled and sliced into 1/4-inch thick rounds
- 2 tbs unsalted butter, and more for baking dish
- Black pepper
- Preheat the oven to 375F. Rub a 13×9 baking dish with butter.
- Heat butter in a large skillet or saute pan. Add onions, garlic, and mushroom, and cook for 3-4 minutes until onions are translucent. Add spinach and saute about 5 minutes. Set aside.
- In a separate bowl, whisk eggs, half-n-half, thyme, salt, and pepper.
- Layer 1/3 of the potato slices in dish, overlapping slightly. Top with mushroom mixture and pour the egg mixture. Sprinkle cheese on top. Repeat the same process and end with cheese on top.
- Bake until eggs are set, about 35-40 minutes. Let it rest and enjoy.
