Brown sugar milk tea popsicles. A cup of refreshing bubble tea is the go-to solution to beat the heat, and it tastes even better in a popsicle form. Say hello to your new favorite summer popsicles.

Finally, popsicles! I’m so behind sharing my favorite summer treats. But, it’s happening now. You in?

Temperatures have been well into the 90s and 100s for the past two weeks. No complaints here. I love the warmth and sunshine, but the crazy electricity bills from running the AC all day and night annoys me. So I’m eating all the popsicles. Brown sugar milk tea popsicles.

Milk tea has been one of the biggest food trends for years and brown sugar milk is the hype of 2019. But if you think you can only enjoy brown sugar milk tea with big fat straw, then you’re missing out.

What is milk tea?

In a basic form, it’s milk combined with tea. Like chai, which is an Indian version of milk tea, but this one is using black tea or your favorite dark strong tea leaves, such as dark roasted oolong tea. Weak tea is not good for milk tea so if you’re a fan of matcha, be sure to get a high quality of this one.

What is brown sugar milk tea?

Some stores use condensed milk to make their milk tea sweet, which similar to the Hong Kong version; however, most stores use liquid syrup or white sugar. To make it fun, we’re using brown sugar syrup.

What is bubble tea? What is boba?

Milk tea won’t be complete without bubble tea or chewy tapioca pearls. You can easily find a store-bought bubble tea at various Asian supermarkets such as 99 Ranch Market, H Mart, or Seafood City. It comes in a bag and different sizes of pearls. To make it, add water in a small pot and bring to a boil. Once it has boiled, add pearls to boiling water and cook according to the directions.

Removing popsicles from mold – run the molds under warm water for 10-15 seconds while slowly and carefully remove each popsicle.

Description

Brown sugar milk tea popsicles. A cup of refreshing bubble tea is the go-to solution to beat the heat, and it tastes even better in a popsicle form. Say hello to your new favorite summer popsicles.


Scale

Ingredients

 
  • 4 cups hot water
  • 8 black tea bags
  • 1/2 cup half & half
  • 1 tablespoon brown sugar

Tapioca pearls:

  • 1 cup black tapioca pearls
  • 2 cups brown sugar
  • 1 cup hot water

Instructions

  • Steep black tea in hot water, along with brown sugar. Let sit for about 10 minutes. Remove the tea bags and cool completely in the fridge. 
  • Meanwhile, bring a pot of water to boil. Add the tapioca pearls and boil until softened, about 20 minutes. Use a strainer to drain the pearls. Return the pearls into an empty pot.
  • Add brown sugar and hot water to the pot. Soak the pearls in brown sugar mixture for 30 minutes.
  • Divide the pearls among the popsicle molds. Add milk tea until the mold is filled. Insert the popsicle sticks, and then freeze for at least 6 hours, or overnight.
