These quick and flavorful Avocado Tuna Bruschetta bites are made using canned Tuna. And you won’t believe how delicious they are!
Since this blog is a reflection of my real life, I try to be as transparent as I can. A few weeks ago, I talked about how I try not to take my relationship with food all too seriously and eat more greens. And today I want to share with you how to make it better.
Summer in our home is always filled with homemade ice cream and BBQs. Though we don’t necessarily invite guest for a big feast, I still do indoor BBQs and enjoy grilled fresh vegetables. Oh yum! The hubs had been wanting to do a BBQ this Summer but life has been busy to the point of insanity lately. There’s been such a deluge of things to get done that I have neglected the most important thing: enjoy my surroundings with the people I love while enjoying a great meal.
So let’s forget about work and talk about this dish for a moment. I am a big fan of fish and if there’s one thing I would eat daily for the rest of my life, that would be fish. Any kind of fish, but tuna ranks the highest. So when I learned about Safe Catch Tuna, I got really excited. I’m using zucchini to replace the toast in this dish so it is Whole30 approved. However- you could totally bend the rules and use crispy garlic bread for the base. Sometimes you just need a little brightness in your life!

Avocado Tuna BruschettaPrint
- 1–2 medium zucchini, cut into ¾ inch rounds
- 1 cup cherry tomatoes, slice into 2
- 1 tbs fresh parsley, thinly sliced
- 1 haas avocado, diced
- 1 can Safe Catch tuna
- 1/2 tbs olive oil
- sea salt and pepper
- Heat grill to medium high and place zucchini rounds the grill. Sprinkle with sea salt and pepper.
- Grill 3-4 minutes per side or until edges are slightly softened and grill marked.
- In a medium bowl, combine the rest of the ingredients.
- To serve: scoop avocado tuna on each zucchini round.
